Cubes of melon with pomegranate, orange segments and blood orange sorbet

Poached Duck Egg
Served on a crouton with a young leaf salad with pancetta and light meat jus

Cumbrian Beef
Slow cook Cumbrian beef brisket served with parsley mash potato, red wine sauce

Slow roasted pork belly served with celeriac puree and cider apples

Served with buttered cabbage, Anglesey mussels and a light fish cream

Braised Welsh Lamb
Braised Welsh lamb shank with a Madeira sauce
